It began with sheets of paper taped to the trees of Parque México, in Mexico City: an invitation to walk and take photographs. I expected three people. Thirty came, with cameras far better than mine, and I understood that something was happening.

That became Fotopaseos: years of journeys for photographers, from the markets of the Day of the Dead and Oaxaca to Cuba, New York, Iceland, Patagonia and India. It was the best training there is. A photographer will go anywhere to stand in the right place for the first ray of light.

As a photographer I reached what many consider the summit: two covers of National Geographic Traveler. Today that trained eye is what leads me here.

TwoFollowing the cold

Fifteen journeys to the Yukon, across the Arctic Circle, and more to Patagonia. The higher the latitude, the more the wildlife, the light and the land changed. For a Mexican drawn to the cold, the poles were the natural end of that road.

The first time I reached the Arctic pack ice, it was dawn and I was asleep. A sound I had never heard woke me: the ice, cracking against the hull. I went on deck half awake and suddenly understood where I was.

The second time, I was searching: bears hunting, towers of ice that form nowhere else, the last ecosystem on Earth, a place that appears and disappears. Standing there I thought: the only way to make this better is the finest ship and the finest chef. That is how Polar Table was born.

After many ships, operators and kinds of expedition, I found the point where polar exploration meets true comfort and attention to detail. That is Paseos Polares. Polar Table is its most refined expression.

What I curate is the right place at the right moment. Not necessarily for a photograph, that is each guest’s choice, but to live it.

And where I am heading: the finest chefs, the finest ships, the rarest routes.

Polar Table. Hospitality at the edge of the ice.

With Polar Table I stepped fully into the world of hospitality. One of the world’s great chefs, twelve guests and an icebreaker sailing from Longyearbyen toward the Arctic ice cap at 82° North. Exploration shapes the day; the table defines the night.

Who is Eduardo Feldman?

Eduardo Feldman is an expedition curator. He began as a photographer, founding Fotopaseos, journeys for photographers, and his work appeared on two National Geographic Traveler covers. Since 2022 he has led more than fifteen expeditions to the Arctic and Antarctica. He is the founder of Paseos Polares and CEO & Expedition Curator of Polar Table.

What does an expedition curator do?

A curator designs the expedition as a whole: the route and landings, the timing of the season, the chef and the small group of guests, so that each guest is in the right place at the right moment. Every day is shaped by the ice and the weather, and every landing is walked rather than watched from the deck.

What is Polar Table?

Polar Table is a series of chef-led, invitation-only expeditions where polar exploration and hospitality meet. Each edition hosts one world-class chef and twelve guests aboard a polar icebreaker sailing from Longyearbyen, Svalbard, toward the Arctic ice cap, with three curated dinners on board.

Which chefs are part of Polar Table?

The 2027–28 editions of Ice Cap are hosted by Jorge Vallejo of Quintonil in Mexico City (two MICHELIN stars), Rodrigo Rivera Río of KOLI in Monterrey (one MICHELIN star) and Julien Royer of Odette in Singapore (three MICHELIN stars). East Greenland and the Antarctic Peninsula are coming next.
